We made this last night and it's quite tasty.
We used pepper jack cheese and garnished with sour cream and oyster crackers.
I think that next time we'll add some sliced jalapenos though. It could have used a bit more kick.

RECIPE: WHITE CHILI WITH CHICKEN
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
2 cups chopped onion
2 cloves garlic, minced
1 tablespoon olive oil
2 15-ounce cans white beans, drained
14.5 ounce can chicken broth
2 4-ounce cans diced green chiles
2 tablespoons Italian seasoning
4 cups cubed, cooked chicken breast
1 cup shredded Monterey Jack cheese
1 cup chunky salsa (mild or hot)
1/2 cup chopped fresh cilantro
DIRECTIONS:
In a 4-quart pot, saut� the onion and garlic in oil until
onions are tender. Stir in beans, chicken broth, chilies
and seasoning. Bring to boil; reduce heat and simmer 10
minutes. Stir in chicken; heat through. Garnish each serving
with cheese, salsa and cilantro.
Yield: 8

It was. If our camera hadn't taken a dump I'd have taken a picture.
Also, we used about a half (I think--I was watching football while THM was cooking...) of a rotisserie chicken just shredded up rather than cubed, cooked breast as the recipe calls for. |

I've made a similar recipe - good stuff. I seem to recall putting a T of masa in it to give it a velvety texture (kinda like the chocolate does in the turkey chili) - - -
topped mine w/ pickled jalapenos, shredded sharp cheddar, and tortilla stips.
oyster crackers are for clam chowder. it's akin to putting ketchup on a hotdog...it's blasphemy. the next thing you know, you're dancing and dreaming of sins of the flesh. |

I will pretend that you didn't make the cracker comment or the ketchup comment.
THM has since told me that she did not use any Italian seasoning. She also used smoked green chilis, cumin, and oregano. Next batch will likely incorporate some adobo, either in the mix itself or stirred into the sour cream. |

sure - oyster stew, go for it. tomato soup even (they do float).
I usually keep one of those little cans of chipoltles in adobo working in the fridge - great to add to lots of things, smokey hotness. like your sister. |
