We made this last night. KILLER. We wrapped them in corn tortillas, with cheese, salsa, and guacamole, everything made at home (except the cheese). You probably don't wanna be around me today...
Mojito Shrimp
Ingredients:
Bamboo skewers
24 fairly large shrimp
� cup soy sauce
1/3 cup Bacardi� Mojito mix
1 Tbsp. finely minced garlic
1 Tbsp. grated fresh ginger
1 Tbsp. sesame oil
� cup peanut oil
Salt and pepper
Sesame seeds
Procedure:
Pre-heat grill to medium-high.
Soak the bamboo skewers in water to prevent them from burning. Thread a couple of shrimp onto each skewer.
In a medium-sized bowl, whisk together the Bacardi Mojito mix, soy sauce, garlic, ginger, sesame oil and peanut oil. Season shrimp with salt and pepper and drizzle with a little extra peanut oil to lightly coat.
Place shrimp on preheated grill, and cook for two minutes per side or until just cooked through. Place shrimp on a platter, drizzle with vinaigrette and sprinkle with sesame seeds. |
