Indian food is my favourite. Slob's right, it's not about curry spice per se. Authentic Indian food has this wicked blend of spices and you can taste each individual spice, it's so rich and flavourful, it's not just a wall of hot. If you get it prepared mild, you'll still get that rich flavour if they know how to cook REAL indian dishes. If you're ever in Victoria BC, go to Da Tandoor, considered by many to to be the best Indian food not just in Victoria, but rivaling anything you'll find in Vancouver and the Pacific Northwest. It's amazing.

I agree. Great place near my workplace w/ killer lunch buffet. I never remember the names of the dishes (which is odd, because I really get into food), but I generally like 75% of he choices. They have this brown Tamarind sauce (Indian sweet and sour sauce) that is so good I would bathe in it. Amazing.

As someone who LOVES stuff w/ lots of seasoning, Indian cuisine is a match made in heaven. So many different flavors can go into one dish. Sure it's spicy, but it's a good burn--not silly. (Granted, I always end up on the throne shortly thereafter).

It's definitely a cuisine that is not for someone with a selective palate, though. Too complex for much of the meat and potatoes crowd.
