dinner for The Warden, twin Bettys, and myself last night:
- marinate the flank in soy, minced garlic, pepper, oregano, onion powder, as long or short as you can, but not over 12 hours --- grill 6 min first side and 4 min second side pretty hot grill
( for MED doneness)
- rice pilaf - saute onion, garlic, mushrooms, and red pepper in little oil, add chix stock and rice as directed on bag (can add sliced toasted almonds @ finish if you want)
- slice squash, peppers, onion, whatever you got and brush w/ oil, S&P - grill while meat is on
*let meat rest 5 min. before slicing - cut across grain
dish it up --- start to plate? 30 min (not including marinade)
feed your mom, she'll appreciate it. |
