Quick Fast Healty and damn Good.........
Chicken breats halfed...... we usally make 2 for each person but extra is always good for later.
Take the skinless chicken breast drop em in a glass cooking pan. Take a whole jar of salsa. I prefer the hotter kinds but some people prefer taking it easy. Dump that salsa all over the chicken then bake at 350 for a hour. flipping the chicken once. Scoop up the salsa and spoon over chicken after flip.
Serve on top of brown or white rice or egg noodles. You can put the salsa and chicken on the rice and snack it down.
Good quick meal. |

I made this last night and with a little twist as I wasn't feeling like having salsa chicken...... I made it all the same way but used marinara(se?) sauce and a can of italian stewed tomatoes. Used lots of oregano and italian seasoning and it came out freaking good. Just thought I would share.

Excellent! You can also put some foil over your grill and do Grouper filets like that. Just fish and salsa, except no flipping. Fish dosen't take long at all to cook. |

I had this the other night. I told my wife about the "awesome new recipe" i read about and how it just might be a meal that I could cook myself, and the next day she cooked it up. She through some extra spicy of some sort on it. Damn thats a good meal. That goes in the "I can't believe i didn't think of that " category..
@T_P_A , are you saying sprinkel bread crumbs over top of the whole thing or just over the chicken and then put on the salsa? |

Shake the pieces in bread crumbs......when you bake it, it tastes just like fried chicken! Also, Ritz crackers crunched up work well (ie. called "Chicken on the Ritz")...I like the bread crumbs because they are a little harder and the salsa doesn't make them mushy. keep experimenting and add your findings!

This is one of my clay pot standards - either salsa or spaghetti sauce. I like throwing shredded jack/mozz, etc. cheese (Yeah not so healthy anymore) at the end, then spoon sauce over. Great one. |
