One of my favorite healthy things to eat, just wanted to share it.
Bake 3 boneless/skinless chicken breasts for 40 minutes on 350 degrees. Or, until done.
Chop chicken into small bite size pieces, and kick it to the curb.
In a large bowl (w/ lid if you got it), mix well the following....
3 cups plain yoigut
1 cup sour cream
1/2 cup mayo
2 Tbsp crushed garlic
2 Tbsp curry powder
1 Tsp chili powder
1/2 Tsp black pepper
Hot red chili sauce to taste.
The curry, chili powder, and garlic already have a little heat.
When mixed thoroughly, fold in....
1 cup chopped green onions
1-1/2 cups cashew pieces and halves
1-1/2 cups seedless red grapes halved
Add sea salt to taste, but the cashews are already salty.
Pick the chicken up off the curb and put it in there.
Mix well, and add more cashews and grapes if it needs to be thicker.
Throw some in a whole wheat tortilla/wrap, with spinach leaves or spring mix salad type business.
Enjoy the shit out of it. |
