Haven't done it in a while...but I'm making jerky tomorrow.
LEAN Bottom Round Roast
a blend of spices, a finish touch (< those are the good bits I don't share)
LOW temp smoking 150-180 (got a propane bottle on my pit, I can keep a low flame going with the occasional wet pecan stick thrown on)
I do a thicker cut, bout 3/4" X 3/4", it's really more of a dried steak.
It's a lot of work, lots of trimming and attention...but damn! |

Always been intrigued by this dried beef stuff.. never tried it but i noticed they recently started selling it at our local supermarket so i might as well buy it and see what its like.
To make it ourself would be a lot better i guess. |

12+ hours of sitting in fridge with spice blend..
All skewered up and ready to go...
Ghetto drying set up, only about 8 hours to go...
Temperature is critical. You wanna dry, not cook...

kobe, if you want some of the shop bought stuff, gimme a shout back and ill pick some up for you and poast it when i get home.
i love the stuff myself, and i recently found turkey jerky...which is also a damn fine foodstuff!  |

Most of the store bought stuff is super thin and leathery, and too salty for my taste. Don't get me wrong...I like it just fine, and have probably eaten our combined body weights in it, but this is like filet mignon compared to McDonald's. |

a friend of mine somewhere in virginia who we dropped in on last year, had soem which he told me to try.
my god...it was fucking lovely!
he gave me a big bag of it to take back but sadly for me, i left it out one night and my father in law 'sniffed' it out and ate most of it!  |
