I made some of these last night with leftovers from a huge free range chicken I bought from a buddy that raises them. The chicken did not taste or smell like a barn which most if not all store bought chicken does.
Anyway, making pastry is a pain in the ass, as was making the pot pies but they were so much better than anything I've bought.
The more difficult things I make, the less I buy that is premade. As it sits now, I buy no processed or pre packaged food anymore, except for the odd frozen pizza here and there, and now I've been making my own pizza dough and home made pizza sauce too.
I'v been making everything from scratch lately since I come for lunch and I don't want to eat out of a box or can.
Screw buying frozen pre made crap. Food you make with your own hands tastes far better than you could imagine, not to mention the satisfaction you get from doing everything yourself. |

Me too. Bought ones give me heart burn and I never get heart burn so I figured I'd do it right and leave out all the added chemicals and thickening agents.  |

I love making these as well. So tasty...and you're right, the pastry is the hardest to do. Since I'm lazy I usually buy some frozen pie crusts and use them instead. |

Not a big fan of the chicken pot pie. Pie crust is generally too sweet for my palate and the consistency of the inside reminds me of mucous.

Yeah haven't made my own crust, but have bought the Costco monster chicken pot buys to rave reviews...fuck another childhood food, pot pie torture, fish sticks the next night... |

the pastry is the tricky part... making"mille feuile" (thousand layers,rough puff) is easy if youve got the method down...practice,practice,practice. if you think of a book then your on your way...fold the dough like a book is what i mean.
the Phoenicians used to select their bakers by the coolness of their hands...wouldnt melt the butter...and roll your pie crust on a cool surface if possible.
im hungry now

My girlfriend makes the pastry and she manhandles it a bit too much. I keep telling her to rinse her hands under cold water or put the pastry dough in the fridge for a bit before all the bashing commences. My hands are always way too hot for that job. |

Chicken / turkey pie is one of my favorite foods, usually we'll cook and eat most of the bird the first night, the next day I get a package of the pillsbury pie crust stuff thats all rolled out, throw in whatever you pic off the bird, whatever stuffing or vedgies you have left over, a can of gravy, and fill the rest with cooked greenbeans/corn/potato if theres any room. Some ground pepper. Bake for 45min. |
