Here's what I did yesterday...




Body Count:
1 10lb Sirloin Tip Roast
3 Racks Spare Ribs
3 Bone in Chicken Breasts
4 Pork Tenderloins
7 Country Ribs.




Burning wood is good.




Private stash of cooking wood. Oak along the back, pecan stacked on the side, bag of hickory chunks.




Beer's for mopping...not drinking. Last peek before it gets wrapped up, hauled off, frozen, or devoured.

It's not much more work to do a lot at once than just 1 or 2 things. Lots of ziploc freezer bags were used. We ate on the Sirloin Tip roast...with just a few samples of other things. Strictly for QC purposes.

what kind of flavor does the pecan wood give(some wiseguy here will "fix" this so that it sounds nasty)?hickory,i have tried,but not pecan or oak...
better yet,what meats do these chunks of wood accentuate?always willing to further the pallete..

Pecan is sorta mild/neutral. Oak is heavier. Pecan is good for lighter (chicken, fish) meats, or when you don't want it "too" smokie. Oak is the go to for beef for me. Hickory is sorta sweet and mild.
