Sounds like a day for scalloped potatoes.
Slice em up and lay em in the pyrex in a first layer
Pour the cream/half and half or whatever on top with a spoonfull or more of butter and a dash of flour.
Do another layer, cover with cream or what-not, flour and butter.
Repeat until potatoes are gone.
Bake it until it looks done / cheesy.
Not scientific at all - throw in onions, ham, peppers, chilis, or whatever else is hangin' in the fridge- cheese on top for a bit when almost done?...seems lazy, but it never seems to come out wrong- maybe more soupy at first sometimes, but still good. |

my scalloped potatos(au gratin) were a big hit last time, maybe ill just bite the bullet and do it again.

2lbs potatoes cubed(cut into smallish squares)
2 cups chopped carrots
1 lb bacon
1 onion(u pick what color)..chopped
as much celery as you like..chopped
1/4 cup flour
2 cans chicken broth(14.5 oz cans)
2 cups milk
cook bacon and chop into small peices(put aside)
boil the potatoes in the chicken stock while you prepare the other ingredients
add the carrots/bacon/celery/bacon, etc
lower to a simmer stirring occasionally....when the potatoes soften up a bit add the milk and flour and turn the heat back up a bit stirring the whole time(do not boil)
its not an exact science as some people like the potatoes harder than others, etc
but its not too difficult and its rad
*add salt n pepper until you love it |

I pretty much lived off of fried potatos during some broke-ass-bachelor days. Dice 'em into 1/2 inch cubes, fry 'em in butter (I use olive oil now, but when yer broke, go with what you can), pepper, seasoned salt, and add anything you can (a Polish sausage and or a green pepper can really make it a meal).
Easy meal. Still one of my favorites. |
