I like this stuff. Does anyone know an easy way to cook pork Al Pastor in a crock pot? Or do you know any other Mexican dishes to cook in a crockpot?

Not Al Pastor (a greasy BBQy flavor IMNSHO, it's served all over NorCal, good Verde and Carnitas is harder to find up here)...
... but yummy Slow Cooker Easy Verde:
1 Pork Butt, cubed
1 tub "fresh" Salsa (the good old chunky diced tomato/onion/cilantro kind)
2 cloves Garlic, crushed
6 Tomatillos diced
Green Chiles to suit (Aneheim, Serrano, Jalapeno, your heat choice)
Throw it all together and give it at least 6 hours.
Easier yet, 1 Pot Roast + 1 Tub Salsa + 6 hours = yum. |

hey mkelty... theres a taqueria in boulder creek of all places, with THE best carnitas ive had yet. if youre ever near there, go give it a whirl. (its gotta be the only burrito spot in town.. haha, if not.. well i just dont know)
also, if youre ever on the peninsula.. here in Pacifica, "The Green Burrito" is murder. puts Gerraros to shaaaame. (all organic and other kindsa silly crap too, if that does it for ya.. haha.. not for me.. but i DO appreciate great cuts of meat and fresh veggies.) |

I was thinking of making this:
3 pounds of cheap pork in cubes, (or boneles skinless chicken breasts)
a jar or two of green salsa
half of a pint of barbecue sauce
a pound or maybe more of my homegrown Roma tomatoes
some anaheim chilis.
an onion
some garlic
cook it for 6 or 7 hours, use it for making burritos etc. |

Isn't Al Pastor roasted pork sliced off of a spit like lamb for a gyro?

You can go way more authentico without the bbq saue or Green Salsa - just not needed...save the verde for later. Use the cheap pork - need the fat to cook it right - the boneless skinless won't work as well- I'm just not a fan of shredded chicken.
Yeah throw in the Romas and anaheims, the onions and garlic. A dash of Cumin you're good to go. It will cook in its own fat... Next time buy the smoked chilis that are in our marketsor a can of chipotles and just use a touch of the sauce in the chipotle. Or throw in some Valentina and squeeze a couple limes and a bit of orange with the onions, anaheims, and garlic.
Dip your tortillas in the sauce before heating em for tacos. I clay pot pork roasts at least once or twice a week - needless to say it's almost always taco night here. Just don't use the premade stuff-it overtakes the meat. |

Exactly. Al Pastor was someones idea after Roach Coach Rotisseries became cheap (after the great Gyro collapse of '79...
It's usually a twice cooked Pork, and greasy as all get out.
