Wild Boar

so, I've been reading some recipes using Wild Boar, most notably a Ragu over fresh papperadelle...long / slow cooking process, lots of flavor development. Topped w/ shaved Pecorino Romano & some minced fresh herbs --- or, served over a creamy gorganzola polenta, topped w/ toasted chopped walnuts.

anyway, boar isn't something I can get here in town readily - online I can buy it in bulk, sure.

Q, especially for those in Canada or Europe, --- how does the flavor compare to beef?

Not the same, more wild, it is more like venison in a way.

I've eaten wild boar. Tastes like strong flavoured pork but has a springier texture which makes it pretty chewy. Tastes good though. I've had wild boar sausages too...but they were smoked and dried so weren't much different to a good saucisson.
