Chili garlic Cholula is good on a shrimp po' boy, or anything fried. I use Frank's Red Hot Sweet Heat when I barbecue chicken. Aside from that, I don't know shit about hot sauce, but would like to find some good ones. Preferably not too terribly hot, with an emphasis on being able to taste the different peppers, etc.

try the cock sauce.

You can have a really nice pepper taste before the heat kicks in.

Cholula is really good, but more expensive than others..... what I pay for a little bottle of it, I can buy about a gallon of Tapatio.

And Cholula's wood bottle cap seems kinda unsanitary, especially in a resturant. Germs live and grow on wood surfaces.

Gogo, it's exactly the opposite. Wood fibers absorb things, and between the osmotic action of the wood sucking the water out of the beasties, and the acidic environment with the lignins, bacteria and viruses don't stand a chance.

That's why all of the high tech self healing impervious plastic formica silicone cutting mats in the world are still not as sanitary as a good wood cutting board.

Cholula is a good buy at Costco, 2 12 or 16 oz bottles for maybe 6 or 8 bucks?
