A little experimenting in the mad scientist's lab again today.....
For reasons I won't go into (just a boring long story), I don't like the taste of beef, pork, etc. Strictly a fish and poultry kinda guy.....if it swims or flies (or tries too...haha), I eat it. Anyways....for that reason, I had a bunch of ground, lean turkey at home.
I didn't want to make just Turkey burgers like I always do, so I thought "why not try meatballs?!?!?".
I scoured the internetz for various turkey meatball recipes as well as regular meatball recipes to switch up a bit. I didn't really see anything that caught my eye so I just made them like I make my "fast" turkey burgers....
a little olive oil (maybe a tablespoon or so....just coat bottom of bowl)
2 eggs
about 3 spoon fulls of garlic ( I likes the garlic!)
non-fat crumbled feta cheese (yeh, I am a healthy eater)
bar-b-q sauce
bread crumbs
pack of ground turkey
a couple of dashes of oregano
add all ingredients in a bowl (except bread crumbs) and mix well. You usually add a good bit of bar-b-q sauce for the flavoring, so it will be a little "loose". This is where you slowly add in bread crumbs to thicken it as you mix. When it "sticks" pretty well to your spoon, your good to go (too much bread crumbs though and it will crumble when cooking!).
After rolling a little "plop" between two spoons till balled up right, I plopped the little balls down one by one on a cooking pan and threw it in the over for 25 minutes at 375.
Made two good hoagies out them for lunch and still have a LOT left over for other meals. It was really REALLY easy and quick (maybe 40 minutes including cooking time?)
Soooo anyways.....what I really am looking for out of this.....does anyone have a REALLY REALLY GOOD meatball recipe to try out? I would prefer them be a little spicey.....so I could use them on subs or in pasta.

sounds good - you might omit the BBQ sauce (a bit sweet for my taste), add in a couple T of tomato paste & some red chili flakes to zing it up a bit. boost the italian seasoning (oregano/basil) & a few dashes of white pepper
for another ground turkey recipe, search THM's (TGM's better half...) turkey chili - simple, cheap, uber low fat, & damn good...
I use ground turkey for tacos sometimes too - & don't tell my kids.
Also have done those meatballs paired w/ pasta & red sauce (& again, not told them it was turkey) - lastly, you can do the same & use asian flavors to make lettuce wraps ---

me and my girl have been making turkey meatballs for awhile now.
we prepare them in a pan as well and them put them in crock on low w/ a jar of salsa.
good little munchies all day long |
