Welsh Rarebit

ORDER OF THE SKULL ORDER OF THE SKULL

2 tbsps butter, 10 oz sharp cracker barrel cheddar, dry mustard, beer 1 egg, worcestershire sauce.

Over lowest possible heat, melt butter, then add cut up cunks of the cheese & slowly stir while melting. When melted add a dash of salt, 1/4 tsp. of dry mustard, 1/2 tsp of worcestershire sauce, and stir all together. Then take a well-beaten egg (use a fork) and 1/3 cup of beer and stir that in. Cook until thick, then spoon over toast or crackers.

I like to sprinkle paprika over mine. I never use crackers, but thats the route to take if you want this as an appetizer. But I like it as a meal, with a side of broccoli or asparagus.

This is not diet-friendly. Goes down well with beer, too. Easy to make.

oh so tasty...

being that I'm a chesse snob, I'd go w/ more of a top shelf cheddar - probably a Vermont sharp white cheddar; sop it up with artesian sourdough toast points...maybe a little freshly cracked black peppercorns over the top to balance the saltiness.

Yeah Lush I said cracker barrel because for a mass-market cheese its decent. For example, Eddie Boy might have a hard time scoring a big crumbly hunk of Cabot sharp white in hell. But they probably sell cracker barrel there.

Last time I went in there they didn't have any cheese at all and deliberately wasted my time. Not even cheddar, the single most popular cheese in the world.

Also Welsh rarebit is always served on toast - as in toasted bread. Crackers? fuck man!

Really? No cheese at all! What were they selling then?



My local shop is the Stratford one, it's 20 minutes away and was smelling good two weeks ago. I got some cheese made by Trappist Monks.

One of my twin Bettys had to select a French food to take in to French class last week - her sister made chocolate mousse last quarter - so she & I were discussing tasty edibles enjoyed by the Francs...we concluded that 6th graders probably wouldn't enjoy truffles, champagne, and/or fois gras, so she settled on a nice selection of French cheeses --- it was cool to explain to her that in REAL Frommage shops, they can tell you all about the nuances of each cheese and they let you tase it before you buy it. She dug that. Kids are cool. If you don't have any, get cha' some...


About that egg, it adds some smooth richness to the dish - not required but won't hurt either...I too prefer it on toast. Crackers, unless they are really good ones, pretty much suck. ***this is coming from a guy who was eating lowfat cottage cheese and Rosemary & Olive Oil Triscuits out of each of their respective containers @ 1 AM this morning, so ...
