mmmmmmm yum! I am addicted to this stuff now.....had it 3 times last week....twice this week! For those that don't know...it's kinda like salsa with shrimp in it but not as watery...I don't know if it is just the place I get it from or just how it is in general......shrimp mixed with picco de gallo (sp?) and chopped jalepenos all on a big crispy tostada with chips on the side to scoop up the ceviche. Yum! Yum! Yum! |

yep - that's what ceviche is...the acid in the citrus (typ. lime & /or lemon) "cooks" the shrimp (or other seafood - )
usually you leave it in the marinade for a few hours - was this how yours was AM?
I made some kick a** shrimp tacos @ home last week. Oh so tasty... |

yep, Lush. It is AWESOME! I don't know what all they put in it....might hit up the girl there to give me the recipe....but they are kinda tight with their recipes there....family secrets.  |

That's what I'm talkin' about. I love ceviche....they've got all sorts of different types at the authentico place by my house. I bet they'd give the secrets- their usually happy to. Have a "week long" prep for a Mole sauce I need to try.
The Chinese/Malaysian place by my house (The chef is Malaysian, so adds to the Chinese menu) is letting me back in the kitchen for a day. It was arranged by my amigo that does the delivery and prep (Funny that Mexicans work in all facits of restaurants up here in the NW). |

ooooo - SNAG that Mole recipe (man, good mole is awesome...)
Funny you said that re: Mexicans in the kitchen - the BEST Sushi spot here
is staffed (+/-80%) in the kitchen by Mexicans - they put out some really nice stuff too. |
