Buffalo Mozzarella Burgers

Pretty easy. Pretty good. Saw one of the FoodTV retards do it, so you can too.

Prepare the burger meat however you usually do it. We use Lowry's and Worcestershire.

You'll need about a half-pound of cow for each burger. Create two quarter-pound patties for each burger.

Take a lump (pustule? glob? nard?) of buffalo mozzarella and hide it between/inside the two burger patties. You may have to slice it a bit, as the lumps aren't exactly the greatest size or shape for burying in meat...

Grill.

Toast your buns--careful not to burn them!

I topped mine off with cream cheese on the top bun and mayo on the bottom bun.

Delicious.

I imagine that a marinara sauce may be a good topping as well.

Sounds good but buffalo mozzarella? Kinda tough to find around here I think but I will look.

If your store has it, it'll be over in the froofy cheese section--not near the bags of shredded Kraft products. Any gourmet mozzarella will do, I imagine...

I've eaten buffalo and bison before. It's been a while since I've had a buffalo burger, the last may have been when I was in high school while Colorado (everybody's favorite D-I rapists) was in town for a football game against Illinois. As I recall, there's a difference between buffalo and a regular grilled cow hamburger (moreso health wise than taste wise), but not a huge or magnificent one. I'd love to have it again though.

Bison is rough and tough. You may actually burn calories in the exchange due to the extent of sawing and hacking required. Make sure you have a good knife...

Only if it's harvested improperly. And that can happen, they have heads of steel�you need to drop them on the first shit or they're tough and gamey. Done properly, the meat is far superior to beef�and quite a bit leaner.
