1. Roast those red tomatoes
2. Roast that garlic
3. Jalipanos or Serannos peppers
4. chop dem onions
5.chop dem lil green tomatios
6. CILANTRO to taste
7. salt and pepper too!
8.put it a blender and grind it up.
9. Get some chips dude
10. chips and salsa is a food group,
you can live off of these for over two weeks.............
options: add pineapple and mangos for Island salsa,
add olives and corn for Greek salsa
add psyocybin for a colorful salsa..............

I think it's Psilocybin
I got this from a little hottie from Chicago. It is simple yes but refreshing.
6 medium sized-tomatoes (or 4 large ones)
1 smallish to medium onion
cilantro
green onions
2 cans chopped green chiles
hot peppers to taste
2 cloves garlic
2 to 3 tsp lime juice
salt to taste
Chop up the tomatoes, onion, green onions, cilantro, peppers and garlic,
and put them all in a fairly large bowl. Add the canned chiles,
lime juice, and salt. Stir that sucker. |

chunky and simple = pico de gallo
tomato, onion, lemon or lime, cilantro, jalapeno(or any kind of hot pepper)
blended and simple = salsa fresca
tomato, garlic, onion, cilantro, lime or lemon, your favorite pepper
blended tomatillos = salsa verde
same as above jus with roasted green tomatillos instead of red tomato
sometimes made with chipotle to form a nice cerdo verde sauce
chopped fresh ingredients of any kind = is it really salsa or is it something else? |

I'm a huge fan of ceviche - add some fish, octopus, halibut cheeks, etc...to any of the above for an amazing "salsa".
Just watch out ordering in a restaurant - KNOW YOUR RESTAURANT and freshness.
I've got an authentico place a block away and weekends is Mexico day...a huge fresh buffet (I always avoid buffets), but this one is amazing on Saturday Day - all fresh. Sunday night - scary, but still packed.
You can tell the hangovers by the bowls of Menudo...nasty looking shit. |

NO! the red menudo is a old time hangover cure. dont knock it until you try it.
trust me. wash it down with an ice cold jarritos pina soda and you are in business! |

Oh I know Menudo is the "cure all", however I somehow have developed a sensitive gag reflex...cleaning the fridge, picking up dog shit, etc...not as easy as it used to be.
Last time I ordered a bowl of Menudo (I usually go for the Pozole) a giant vein loaded tripas floated to the top and I lost it (Partially alcohol enduced I'm sure)...right then and there I puked.
So I had been going for the Pozole, but last time, the hog foot floated up- and I nearly lost it again. Now I'm sticking with the ol' "stand bys"...Chorizo/egg Super Burritos and a Horchata.
The restaurant has also been known to grossly overserve and probably overcharge me for alcohol at the same time...but I have a soft spot in my belly for Don Julio Anejo and Latinas that love gringos that can sing karaoke and not understand the words at all. |
