The Warden scored a skirt steak over the weekend - I'm headed home to marinate:

- veg oil
-lime juice
- a little sea salt
- black pepper
- chipotle pepper
- cumin
- a touch of garlic/onion/ and chili powder

smokin' hot grill, throw down some onions,
dice some cool avocado - wrap in corn tortillas...

Tasty, it was - accompanied by arroz (made w/ chicken stock) y frijoles negros (added a little oregano and cumin) ---

I find myself really enjoying skirt lately. Oh, the steak was good too...

How long did you marinate for?

a good hour @ room temp - meat was sitting out while I prepared the marinade...honestly, it was good (the lime really came through), but added marinating time would have been a plus - overnight is fine, I rarely do the 24 hour thing...

going for the tri-tip on the grill this coming weekend - maybe some grilled asparagus and roasted potatoes & garlic --- the little grape tomatoes are good grilled too.

I do grilled asparagus alot at work. A bit of a bitch on the broiler but damn tasty with the charcoal. I don't like to mainate overnight either. A couple hours is perfect usually for me. I may try this on the weekend if I am actually off.

Fucking perfect man. The key is the CORN tortillas, no flour.
