We did some Kingfish kabobs last night. I think they just marinated the fish in a little lemon butter prior to cooking. They were fucking good. Then I got drunk.

I blacken it on the grill. Just get some of that Prudhomes (sp?) Snapper Blackening stuff...fire it up and grill away. |

Best way to do it. Wouldn't just a decent cajun seasoning do it though? I like to have a rich tomato garlic sauce with it as well. |

Catfish is a pretty sturdy fish, so, marinate the fish in some Mojo Criollo, a healthy glop of thai garlic/chili paste, then grill it up. Serve over some rice, with a salad on the side. Also, the smaller the filets, the sweeter the fish. Since most catfish is farm raised these days, they can tend to get a bit "muddy" as they get bigger. |
