Ok...I have been promising this one, so here goes. I LOVE Guacamole....however, I try to eat very healthy and guac is sooo high in fat due to avocado. Soooo this is a non-avocado alternative. My Mom used to make this all the time and got me hooked on it. First off, it is super easy to make. Second, it tastes EXACTLY like guacamole if you do it right.
2 cups cooked asparagus (fresh or canned...I just use two cans)
2 tablespoons diced chilli (optional)
2 teaspoons tomato paste
1 teaspoon lemon juice
1 tablespoon chopped red onion
3 tablespoons low fat mayonnaise (or FAT FREE)
� teaspoon cumin
� teaspoon garlic powder
1/8 teaspoon white or black pepper
1/2 tsp dried oregano (optional)
1/4 tsp salt (optional)
1/4 tsp cayenne (optional)
(*instead of all the seasonings,you can use the guacamole seasoning in the package also)
(**diced tomatoes are good in the mix too though some people don't like tomatos in their guac)
(*** can also throw in some jalepeno diced fine for a little kick)
Put all the ingredients in a blender or food processor. Blend to desired
consistency. Let it sit/chill in the fridge for a while until it firms up a bit and becomes more guac-like, though you will be tempted to eat it all right off.
There is little to no fat. It looks like the real thing and almost tastes like it too. For variations, simply do a web search for "Asparagus Guacamole" and you will get lots of suggestions!
Some people also make it with peas or broccoli, but I think the Aspargus is more right on with the texture and taste. |

????? WTF? It tastes fuggin great! Do you know what kinda lazy, sloth I would feel like if I ate the equivlent of a small tub of ice cream full of guacamole in one sitting?!?!? With this stuff, you can eat a large bowl of it and feel no ill effects.....except for the Asparagus gas.
Some of us can't eat a large deep-fried pie of deep-fried butter wrapped in bacon surrounded by a pool of bubbling cheese topped in sour cream.  |

You do know that the fat in avocado is mostly mono and poly-saturated, you know the good fats. |

yes. But I still don't overdo those either....and it is typically the other stuff they put in regulat quac also that is not good. |

I do not know what to say. You obviously have moved away from the south and been hanging out with yankees. I feel shame, pity, and disguist for you. Does Zodiac know about this? And what other stuff do you speak of that makes guac bad for you? Avocados, lime, onion, tomatos, jalepenos, cilantro, salt, pepper, cumin. What in that is bad for ya? And who the hell can afford to make a tub of this considering avocados are $1.50 a piece. |
