this is a pretty straight forward recipe, but the results are INCREDIBLE!!!
Prep Time: 30 minutes
Cooking Time: 3 Hours
Ingredients:
3 lb corned beef brisket
1 large onion
2 garlic cloves, minced
4 whole cloves
2 bay leaves
4 small potatoes, diced
2 cups baby carrots
2 lb head of cabbage, cut into wedges
wash corned beef in cold watter, place in large kettle or dutch oven.
cover with water; add onions, garlic and seasonings. cover and simmer for about 3 hours or until tender.
remove meat from broth. add potatoes, carrots, and cabbage; cover and cook for about 15-20 minutes.
slice corned beef across the grain, making thin slices. serve with vegatbles.
TASTY VARIATION!!!!! this is the part that makes the whole thing worth while!!!!!
ingredients:
1/2 cups dark brown sugar
1/4 cup & 3 TBS prepared mustard, divided
2 TBS sugar
1/4 TBS vinegar
1/2 cup mayonnaise
after removing corned beef from broth, combine brown sugar, 3 TBS of mustard and enough broth (about 2 TBS) to make a thick paste.
place the corned beef in a baking dish and spread the mustard mixture over the top.
bake in a 400 degree oven for about 15 minutes (while the vegetables are cooking).
Meanwhile in a separate dish, combine 2 TBS sugar, 1 TBS sugar, 1/4 cup prepared mustard, and 1/2 cup mayonnaise; mix until smooth. serve with corned beef and vegetables!

this reciepe is pretty traditional. it's a very put meat on your bones type of meal!!
my recommendation is to substitute balsamic vinegar for the vinegar, dark brown molasses sugar for the brown sugar, and honey mustard for the prepared mustard.
guys i made this meal for my gal and she said it was the best meal she has ever had, better than anything her mom has made! her mom is a traditional polish lady that LOVES TO COOK!!! trust me this recipe is that good and THAT EASY!!!!!

Shouldn't a Guinness or some good Irish whiskey go with it? I'm going to try it out - my gal loves Corned Beef / Cabbage.
Think it's comedic and bad advertising that the local Irish Pub/Overpriced Restaurant actually says (On the menu) that the Corned Beef / Irish fascination is completely false and is wrongfully paired with the Irish. Yeah, makes me want to order it at $16.00 a plate. |

yea lilsheeda, it's great! you'll love it! the mustartd glaze and sauce is what really makes it stand out. try using the substitutions i suggested.
also a guiness would go with it nicely! ENJOY! |
