So there's some good "ghetto" fried chicken places around...even one that expresses their shit to Oprah on airplanes (Ezells).
But anyone have a good "from scratch" recipe for? Need to cook my gal a nice dinner (Yep and she wants her fried chicken) - 7 years since that fateful Halloween night. |

Tom, ya gotta have the right equipment:
- a cast iorn skillet, 1/3 filled w/ veg oil - heat to 350 deg.
- soak the chix pieces in buttermilk overnight / drain
- coat in seasoned flour (S&P, a little paprika, a little cayenne if you like it spicy...)
- fry it up! just a few pieces in the skillet at a time, takes about 20 min+ to cook all the way --- keep in oven @ 250 deg. untill it is all done.
serve w/ mashed potatoes or mac & cheese --- yum. |

you gotta start by letting the chicken get to room temp(trust me)
then use a cast iron skillet with two inches of oil( I like peanut)
combine two cups of milk with two eggs and whisk to combine
season your egg wash and your flour(plain ole white all purpose flour) with your favorite seasoning( I like prudohmmes or emerils)
dredge the chicken in the flour and then in the egg wash then back in the flour
bring your oil up to 340 degrees and then cook on each side until done
dark meat takes longer than white meat so do these first
the best side for some good fried chicken is red beans. You can probably get away with jazzin up a can of blue runner reds
also some jalepeno corn bread with that would set it off
drink dixie beer through out the whole process and during meal for a warm fuzzy on the bayou feeling |

you missed the most important piece of equipment, a sweet ol southern granny to cook it fer ya. THAT's what makes good fried chicken. |

Definitely an Iron Skillet cooker here...printing out and doing both this weekend, thanks. Was wondering if anyone had actually tried many suggestions from this here Skarfing Material.
I'm not usually a fried food eater, but will be pleasing someone elses belly for sure. |

I couldnt remember the name of that place. i went there prolly 2 years ago. that is definitely some goood chicken. |
