My boss got an elk last year in New Mexico. He's been serving it as such:
Stew sized cubes of elk meat
Delicious bacon....
Jalapeno slices
Take a cube, place a jalapeno slice on it, wrap with bacon, skewer with toothpick or put many on shish ke bob skewers, cook slowly on the grill, eat until your stomach bursts....
I had these a few times with him, but he made some on the fishing trip last week. Phenomenal! |

awesome, I hunt elk in Greer Az (white mountains) so I always have some in the freezer. Hockey puck sized elk steaks wrapped with thick cut bacon from the butcher is great!!
also I get quite a bit ground up in 1lb logs, it makes excellent taco meat, you dont have to drain any grease since its so lean. never tried the jalapeno... but I have put green chillis from new mex diced up into my taco meat. Elks are great till your driving to the cabin at 2am on a dirt road and a 6' tall bull jumps on the road...  |
