macaroni & cheese

submit your homemade recipes, talk about what you add to the boxed stuff, etc


i like the stuff w/ the sauce packet(not powder) and i add hella jalapenos.

i'm looking for killer homemade recipes too

My wife made this one in order to slip vegetables into our meal. Try it, it's pretty good...you won't see it on man vs food though.


Servings: Serves 4
Ingredients
1 1/2 cups elbow macaroni
Nonstick cooking spray
1 tablespoon olive oil
1 tablespoon all-purpose flour
1/2 cup nonfat skim milk
1/2 cup butternut or cauliflower puree
1 1/2 cups shredded reduced-fat Cheddar cheese (about 8 ounces)
4 ounces (almost 1/4 cup) reduced-fat or nonfat cream cheese
1/2 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper
Directions
Bring a large pot of salted water to a boil, add the macaroni and cook according to package directions until al dente. Drain in a colander.

While the macaroni is cooking, coat a large saucepan with cooking spray and heat over medium heat. Add the oil, then the flour, and cook, stirring constantly, until the mixture resembles a thick paste but has not browned, 1 to 2 minutes.

Add the milk and cook, stirring every now and then, until the mixture begins to thicken, 3 to 4 minutes. Add the vegetable puree, Cheddar, cream cheese and seasonings and stir until the cheese is melted and the sauce is smooth. Stir in the macaroni and serve warm.

You know what I just add a Trader Joes, red or green curry tuna packet to it and it is awesome!

I prefer the Kraft Dinner version.

Make the KD.
Drain.
Add the powdery shit.
Add butter.
Add some chedder.
Add pepper.
Melt it all in together.
FUcking eat it.

It's good baked.

make normal, put in casserole dish, put slices of cheese on top and bake.



It's also good with sour cream, and you could probably delete the butter

I had a hunk of leftover muenster that I tossed in with some microwave EZ-Mac. It was freakin' amazing.

Otherwise, brown up some hamburger with a bit of Worcestershire and chili powder and mix it in with the boxed stuff.

Throw some hash in there when you make that boxed stuff- if you use weed you need to add a bit more milk to avoid it drying out. I like adding an ounce or three or four of monterey jack and some freshly grated parmesan... also jalapenos, tuna, black olives are good in there too.

The Trader Joe's mac n' cheese (in the red box) is much better than the Kraft stuff. Three kinds of real cheese.

Back in the day, I used to add chopped onions and diced tomato. Damn good.
