you can do eggplant if you cut thick slices, then quarter them into "pie slices" and stick them through the skin.

goat

pineapple is awesome, sooooo tasty.

marinate everything in olive oil & vinegar, salt, pepper, spices.

Marinate pork or lamb Greek style. Olive oil, oregano, salt, pepper, lemon juice, party.

I'm a fan of thick cut bacon wedged in between the veggies on my skewers. It gives plain veggie skewers a nice added flavour and is good next to chunks of green peppers.

Plain veggie skewers I'll drizzle olive oil and balsamic over before grilling.

A good easy thing is brushing a store bought tandoori paste over chicken chunks and then onto a skewer with chunks of purple onion between the chicken. A bit of lime squeezed over is good too.

We did this over the weekend...we did chicken, red and green bell pepper, onions, yellow squash, and mushrooms. I just used some stuff I had around the house for marinade. greek salad dressing, olive oil (extra virgin...that sounds cool ), balsamic vinegar, some lime juice, and soy sauce. It turned out pretty good, even though the rain kept me from doing it outside, ended up doing it on the foreman indoors. I like doing the onions, but they are def. a pain to keep together in one chunk...

We're on a heavy shish tawook (taouk) run...lebanese chicken, marinated in yogurt, lemon, onion, tomato and spices overnight. A total favorite of late...

The kicker is to have the pita and make the lebanese potato/garlic paste.
