How do the Mexican restaurants make their ground beef?

When I make ground beef for tacos, it usually involves browning the meat, adding spices and fresh peppers, and serving it. It tastes nothing like the ground beef you get at a Mexican restaurant. It's not so much the flavor, but the texture -- the good stuff is smoother and more greasy.

Do they do it in a slow cooker? Why does it taste so much better? Is there a secret ingredient like flour in there?

They probably cook a whole bunch and keep it warm in a steamer—that and a fattier ground beef might do it.

That's kind of what I'm thinking... maybe brown the meat now and then put it in the slow cooker with a few cups of water and let it sit all day.

I usually put a can of tomatoes or tomato purree in the pan after I browned the meat and fry it until the liquidness is gone.
I think that´s what they do.

Bingo!
Boil it from raw to brown then add spices and remove some of the water, leave it on slow cook for a long time till almost all the liquid is gone.
Kinda long process better make a lot.
