Fairly quick n easy chocolate cupcakes. Get your wife, GF, or kids to help or make them for you. LOL...
1/2 cup cocoa
1/2 cup boiling water
1 1/2 cups flour
1 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
2 large lightly beaten eggs
1/4 cup milk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F.
Combine cocoa and boiling water, whisk/blend, set aside.
Combine flour, sugar, baking soda, and salt in a large mixing bowl. Cut butter into flour mixture and mix until crumbly.
Combine eggs, milk, cocoa mixture and vanilla in a small mixing bowl; add 1/3 of the egg mixture to flour mixture. Blend until batter is smooth.
Spoon batter into paper lined muffin tins. Bake 22 minutes check with toothpick until it comes out clean. Remove from pan; cool completely on a wire rack. Dust with powdered sugar or ad frosting.
Yield will be around 18 cupcakes. Tasty. |
