Oddly enough, there's higher sushi consumption in North America than in Japan.

Actually, Sriracha is a Vietnamese sauce & technically, most of them rolls are American style sushi that was invented here in Cali.
Shichimi is a Japanese spice but not always used in the spicy tuna. Some places do but its likely a combination of ra-yu(chili oil) & sometimes that sriracha.
As I said, most of these "rolls" were conceived in the states other than the futo-maki & a handful other traditional rolls.
Such as the Cali roll, spider roll, philly roll, spicy tuna & the list goes on & on.
These rolls are authentic as much as a mexican pizza.
But whatever, they taste good & I still eat'em.

I've actually had the pleasure of extensive sushi dining in japan. It was a great culinary experience.
AND
To add a little icing to my cake, One of the dudes on my skate team is a professionally trained (in japan) sushi chef.
Oh, and slob, that wasabi went way bad, I'll have some more sent over. |

Well, I made the sushi dinner on saturday, and it was incredibly good. I was very very impressed with my first attempt. It went over very well. Thank you all for your input, advice, and laughs.
Oh, and bad news Blair, Grampy's outta the fish-doobie business. but I'm sure he'd make some special for you at home.
Oh, and fresh ground wasabi root is on the way from Shizuoka. Should be here in about a month. Just in time for Xmas.  |
