Lots of good fire talk on there. Great forum with very helpfull members. Make your own hot sauce. Just Make sure you wear gloves eye gear and a face mask. The vapors of Habs will burn flesh just about. You get it in your nose or eyes, wow doggie.
I like making mellow sauces . I like ancho chilis cooked down in vinegar with garlic some herbs and some other stuff. Then you strain it all out and keep the liquid. Has a bit of a kick, but a nice smoking pepper taste.

Based on flavor, my favorite is Tapatio....I like Siracha but only when I mix it with soy sauce. |

tapatio, tabasco...all the old stand-bys do well.
the COCK SAUCE that everyone is referring to;
is that the one with the glue bottle looking lid
and all the seeds in it? that shit burns both ways!
oh yeah, avoid any sauce that was previously
described as "runny" as i'm pretty sure it also
means coming and going. |

Tapatio is definately the greatest. It's even good on icecream. But Dave's Insanity Sauce is for sure the hottest. If you live in da hood, you might wanna try.............................

Sriacha is great on pork fried rice....goddamn. I like that it's more a of paste than oil based.
That Daves (thought it was Mike's) Insanity is just that. One time I put it on a Wendy's jr bacon double at my old job, ate some, and this brotha was sitting next to me watching my reaction and I let him try some on a french fry and his ass was running around yelling and shit, absolute hysterics, buried his head under the water fountain...never forget that shit! |

There's a few sauces I always like to have on hand; to suit different foods-- gotta have the right sauce to suit the right food
For a Mexican taco style hot sauce; it's really hard to beat Bufalo Picante Especial.
They make a Jalapeno variant that's good, but not as good.. this stuff is excellent.. nice and hot and tangy.. not out of control macho man sauce; but a good dose of it will pop a sweat on ya.
Cholula is good too, as is El Yucateco
Cajun power Garlic sauce is some good shit, too
But i find a lot of Louisiana Style sauces are pretty interchangeable, not a big fan of Tabasco, though.... and WTF is up with Texas Pete's? Not bad sauce, but ought to be Louisiana Pete's anyway-- they don't even sell that stuff in Texas...
On the Habanero end of things, Grace Scotch Bonnet sauce is real nice ( works well on a lot of non carribean type foods, too)
and of course the ubiquitous Sriracha. Although I used to be able to find the Thai sauce called Shark that i think was better... |
