Catfish on the grill....

Soak the filets overnight in baking soda and water, will remove any flavor from them. Rinse them very well, then coat them with fresh cracked pepper, cilantro and grill, vary your time depending upon the thickness of the filet. Once finished squeeze lemon juice on them and enjoy...mmm mmm fresh fish, just might hit the lake tonight...

Although catfish fried is hard to beat..

Or better yet lime juice. Lime and cilantro kills me.

I've been insanely busy with the band and with trying to open a new venue/bar/restaurant. I'm sneaking back in here little by little though.

Need a 20' backbar needing a little resto? 20' planks of Mahogany / Art Deco style from the 30's. I've got the old thing in my garage and am thinking of offing to resto my '54 truck...which bums me out since it was the future.

Frustrated that my restaurant plans (Music venue) will never get off the ground - since I have ZERO experience other than business background and no balls to make it happen.
