I never had good fried chicken till I moved to the south
it is really awsome - esp when made by old ladies who have been making it for like 40 years -

I'm sold on the Buttermilk marinade. I threw in a ton of Cayenne, salt, pepper, and a few of my other flavors...totally soaked flava into the chicken - for sure...sold on that. Did a standard spiked flour.
Used the Iron Skillet and Peanut Oil.
Flavor was fantastic, but the best part - the fried skin...all fell off and for some reason stuck to my skillet.
Maybe it was temp. of the oil, maybe the chicken temp (The room temperature). Or maybe I'll do the Buttermilk Marinade, then the egg/milk wash.
Solution yet to be determined...but have more chicken going into a marinade tonight. |

Shit, should have done the double dredge dip. Will have to go for the buttermilk then the milk / egg twice.

Thought I did better, but my gal thought it was shit and too greasy.
Seems I can cook everything but fried food...go figure - shouldn't eat the shit anyway. |
