Exactly. Al Pastor was someones idea after Roach Coach Rotisseries became cheap (after the great Gyro collapse of '79...
It's usually a twice cooked Pork, and greasy as all get out.

Holy moly we got Mole. Now we're going to do this:
7 pounds of pork butt cut into chunks
big onion chopped up,
some anaheim chiles
couple of serranos, cut up really really small.
shitload of tomatoes (still debating who gets to skin them if they even get skinned, I say forget it leave em on)
some garlic
throw in some kush trim
16 ounce jar of dona maria mole sauce. (i had this before, it is insanely good)
yeah Tiki bonham is a legend. i'm thinkin this pork butt is going to be legend too, after about 9 or 10 hours in the crock pot.  |
