Hey all was thinking of making some enchiladas tonight for the girlfriend.
Nothing too spicy but I do like it hot.. anyone have a foolproof "go to" recipe they would like to share.

I do mine on the fly.
Most important thing is to get real corn tortillas (and fry them in oil) and get quality enchilada sauce or make your own. Most cities have a small ethnic grocery that has such things�steer clear of regular grocery stores.
Whether chicken or beef, I brown it then cook it slowly in onions spices, peppers and enchilada sauce until if falls apart. Assemble, put in glass oven pan, cover in sauce and cheeze and bake for 45 minutes. |

Wife usually makes them.
Cooks up the chicken by boiling usually. I add spices to it once it's cooked and fry it a little in a pan for flavor. She wraps them in tortillas, drowns them in sauce, cheese on top, then bake. Kids LOVE them. |

Can always do the trashy way and buy a bunch of frozen taquitos, pour over some chili verde or enchilada sauce, top with cheese and bake. Funny how many people can be fooled...
As for the hot but not too spicy, grab some chipotle and take out the seeds. |

i do it nice and simple..
-1lb ground beef
-1 lime(juiced)
-1/8th bunch of Cilantro, minced
-1 med onion diced
-3 clove garlic minced
throw it all in a pot and mix together till it starts browning on the stove, in the meantime heat up about 10 white flour tortillas so they bend easier, and grab
-1 bag of pregrated mixed mexican cheese
-1 can of la victoria or whatever it is enchalada sauce
throw a spoonful of the beef mix on a tortilla, top with cheese, fold the sides of the tortilla in, then roll so its nice and contained, repeat till you fill a casserole dish, top with the sauce, then cheese.
pop in a 375 oven for about 20/30 min.. when it looks done it is.
let it cool for a few minutes then grub down. usually takes about 45 min to do total, so its fairly quick and you really only did about 15 min of work. |
