Healthy and Damn Good Chili

My friend Michelle sent me this as I begged because it's so good. I don't live by her anymore so she finally coughed up the recipe.

Made it tonight for my lady, she loved it.

SHMELLY'S CHILI (Her nickname)

1 pound extra lean ground beef (like the 7% fat or
less kind)
1 large onion, chopped
1 green or red pepper, chopped
3 garlic cloves, chopped (or i sometimes used the jar
of already chopped stuff)
2 (15 oz) cans diced tomatoes, undrained
1 can kidney beans, drained
1 can black beans, drained
1 can garbanzo beans, rinsed and drained
1 cup salsa (any kind you would eat w/ chips will do)
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon or so of salt to taste
3/4 teaspoon dried oregano
pepper to taste (i use chili flakes too, we like it
SPICY)

brown ground beef and add onion and pepper, cook until
onions start to get clear and add garlic. drain any
grease if neccessary (usually if you use good meat
there won't be any). add all remaining ingredients and
stir. bring to a boil, reduce heat and then simmer it
for at least a 1/2 hour before eating (an hour would
be best).

serve with sour cream and cheese if you want.
and don't forget the corn bread.

It can be made with ground turkey also if you want to go ultra healthy. I would imagine you can leave the meat out for a great veggie feast.

It's so good, I thought I would share.

do a search here for THM's turkey chili recipe - made it countless times over the winterr - cheap & easy (ahem, no corrolation there...) - TASTY!

My key to chili is after browning the beef, dump some worchestershire sauce in there and let it cool for a teeny bit. After that, dump in a beer (Sam Adams works great) and let it reduce for awhile.

Add spices and whatever else you add afterwards. The beer just adds a nice extra layer of flavor to things.

Nice! I'll give that a try, perhaps with New Castle. I like to use stew meat and trim down all the fat. Toss in flour and brown it off in oil(sun flower usually), also black beans rather than garbonzo.

made this chili tonight exactly like the recipe calls for minus the garbonzos and I added a little dried pasilla pepper
came out fucking great and super easy
