Meh.....they just taste like really strong green olives to me. I like to put those and toasted pine nuts in pastas. |

Delicious! I made this recipe with a very slight variation over the weekend.
I was not able to get Japanese eggplant so I used two Chinese and one regular eggplant. After topping each layer with breadcrumbs and spaghetti sauce I sprinkled a good sized handful of cheese. I used a four cheese Italian mix. I used that mix as well as shredded parmesan for the top layer. I think next time I make this I am going to substitute one of the layers of eggplant for a layer of zucchini.
Good call on the capers, spinach and garlic on the top! |

Awesome to hear!!! ....and yes, I think the "topping" really brings the ingredients all together.....there's a lot of "flavor" going on in there! |
