My family has a staple slop meal for those busy and broke nights. We call it Guts and Goolah. Basically it's ground beef mixed with a can of Cream of Mushroom soup, served over rice.
Guts 'n Gomez is my latest take on it. No significance to the Gomez name, it just started with G like Goolah does and sounds spanish.
No precise measurements, just dump everything in until it looks right.
Brown (1-1.5 lbs) ground beef with diced onions, dried onion flakes, whatever
Add 1 pkg. Old El Paso (or the like) taco seasoning
add your favourite salsa sauce (almost a whole jar, not a Costco sized one though)
add sour cream
let simmer for a bit (say 5 or 10 minutes, or maybe even 20)
just before serving, add smashed tortilla chips
I guess you can jazz it up more by adding fresh veggies, chillies or whatever, but I haven't...
Mix it all up and serve over rice... yummy  |

Love these type of meals...my broke ass family's meal was Tater Tot Casserole.
Something like ground beef, a layer of cream of mushroom, tater tots on top - and bake. Lovely with ketchup. |
