1 zuchini, sliced and diced in quarters
1 large tomato diced
handfull of roasted pecans
crumbled feta, sharp provolone and parmesan cheese
2 tbsp of chopped garlic
1 sweet onion sliced thin and halved
1 cup of fresh baby spinach leaves, diced
1/2 cup of plain yogurt
lemon zest
new mexico chili powder
paprika
basil
salt and pepper to taste
add the seasonings to taste..more or less for your likes.
mix all that in a bowl and stir.

Looks like a great salad but you diced the baby spinach? What are they putting in the water in Ohio? |

I just followed this recipe and it was really good! I couldn't find provolone at my supermarket and I forgot to buy Basil, but apart from that, me and the mrs really enjoyed it. Thanks! |
