My wife made this and it was killer.
Take day old mashed taters. Whip em' up with a fork until smooth. Mix in a few tablespoons of cream cheese, add a dash of cayenne for spice, then pat em' into cakes and fry them in a little bit of butter. They were killer. Excellent food for y'all who don't have much food in the fridge. |

I have done something similar. Whipped up potato, roasted garlic and caramelized red onion. Make into paddies and fry them until they are golden brown on both sides.
