Sushi Lovers Fight Fish Freezing Law

TORONTO (Reuters) - The clock is ticking for chefs and sushi lovers in Ontario as they gather ammunition to fight a provincial government order that all fish used in the popular Japanese cuisine must be frozen first.



The battle pits parasite-conscious public health officials in the Canadian province against chefs and their customers who say freezing the fish destroys its taste and texture.


"This is part of Ontario's efforts in health protection and promotion, and it is a precautionary measure only," said Dan Strasbourg, a spokesman for the Ontario health ministry.


He said the province's ban on unfrozen raw fish will take effect on Jan. 1. It aims to prevent an illness known as anisakiasis, where a parasitic roundworm burrows into the stomach or intestine.


Doctors say they have seen no evidence of the disease.


"In my 28 years of practice, I've never seen or heard of a single case of anisakiasis," said Jay Keystone, an infectious disease specialist at Toronto General Hospital.


The Ontario regulation, announced Sept. 1, says restaurants can only serve raw fish that has first been frozen to -20 Celsius (-4 Fahrenheit) for seven days or -35C (-31F) for 15 hours.


The move has outraged sushi chefs, who are collecting signatures from customers for a petition against the regulation.


"When you freeze sushi, you lose the taste and texture, and everything else that's wonderful about raw fish," said Barry Chaim, owner of Edo, a high-end sushi restaurant in Toronto.


"In my 18 years of owning (a restaurant) and in my 35 years of eating sushi, I've never come across the parasite."


The Ontario health ministry said it is merely turning federal recommendations on freezing raw fish into law.


But Health Canada admits the number of people who fall ill from eating contaminated raw fish is low. "It's rather rare for someone to get sick from eating raw fish," said spokeswoman Margot Geduld.


Chefs said it would be easy to see and remove a roundworm, in the unlikely event that they found an infected fish.


"I have never seen a parasite in any fish I've prepared, and if I did, it would be easy to find and physically remove it," said Hiro Yoshida, who has been serving raw fish at his popular Toronto restaurant, Hiro, for 23 years.


"I am careful and I know my job. I don't understand why they have to take something with such good taste and destroy it."

Poor Toronto. So many misinformed people who fear sushi withouth even knowing what it is, how it is prepared, what the various types are, etc. I was eating at a sushi bar a while back and at a nearby table in the resturant area was one of those "know-it-all" type older women. She was talking with a group of 4-5 other people. She was doing that thing where she was talking very loudly to make sure she was heard by those beyond her discussion, but so that if confronted she could act as if she was having a private conversation. Anyways , she was like 8 ft from the sushi bar, around which sat 10-15 people including myself. That woman says "ooohh I would never eat sushi....it's soooo dangerous. You can get all kinds of diseases from it and even mercury poisoning! Civilized people cook their food before they eat it!". I was sooo ready to jump out of my seat and call her an ignorant bitch....but I knew I'd be wasting my breath.

I love sushi and eat it at least once a week (up to 3-4 times a week if on the road and I find a good place....gotta love corporate expense accounts!). My favorite right now is a large sashimi (now THAT's the good raw stuff!!) combo plate and then for "dessert", 2 pieces of Uni (when available) or 2 quail egg rolls topped with ikura. Yum!!!
