Burger sauce

Making burgers tonight and I'm getting tired of the usual ketchup and mustard...

Anybody have a good off-the-cuff (as in, I probably have the stuff in the pantry) burger sauce? Preferably a mayo-based one?

One of my favorite ones recently was a bruschetta burger:

Slice a round Focaccia bread into 4 "buns", slather with olive oil, and toast on the grill.

Cook your burger (medium rare: the only acceptable done-ness).

Spread pesto on the bottom half of the bun, then lay down a slice of fresh mozzerella.

Then comes the burger.

Finally, top with fresh bruschetta.

slices of provolone cheese or pepper jack,sauteed red onions(for better flavor),mushrooms(any) with a couple of strips of turkey bacon sprinkled lightly with either steak seasoning, pepper and a hint of a 1/4 sliced lemon squeezed gingerly ALL over.then ad a-1 sauce and optional "designer" mustard(honey,etc)..
its probably going to be as good as a mess going in as much of a mess goin out,but damn,if it ain't good while it sits in tha middle..
add some optional tortilla crisps for crunch and if your dareing,some sliced chilis...

as buster rhymes would say"WHOOO-HAA"...

mesquite chips optional..

Mayo based? Can't help ya with that one, never touch the stuff.



I usually throw some bbq sauce on the sumbitch and maybe some french fries and call it dinner...

Fry sauce is big in Utah, every burger place.

roughly 2 parts mayo to 1 part ketchup.

you can add dill pickle juice, cayenne, onion powder, etc.

add sweet pickle relish and it's sandwich spread

roast a bulb of garlic, crush it, whip it into a bowl of mayo and add some lemon juice and a ton of black pepper.

Or maybe make a marie rose with Mayo, ketchup, tabasco and lemon and grill some fish burgers.

Failing that, drink 30 beers and fall face-first into the BBQ ruining the evening for everyone involved.

Dehydrated garlic powder, Hy's seasoning salt, fresh ground pepper, brush with bacon fat before hitting the grill—done.

Idiot proof way to make delicious burgers: Take regular ol' yellow mustard and rub it on the raw patty...nothing else. Then grill, fry, whatever you do to cook 'em.
