I make an assload of salsa, and I am always fine tuning my recipes (that’s my way of saying I never write them down, so they’re always different). I made one this past weekend with some homegrown tomatoes, and peppers, and it was the best yet, so…I wrote it down. If you’re looking for a salsa with some heat, and a really crisp but smokey flavor, this one is for you.
8 Medium ripe tomatoes
5 cloves of garlic chopped
1 white onion chopped
¼ cup of cilantro
1 large (or two small) Jalapeño pepper chopped
1 Serrano pepper chopped
5 Chipotle peppers (from can in adobo sauce)
½ teaspoon salt
½ tablespoon of red wine vinegar
1 teaspoon lime juice
Slam it till it’s juice in the cuisinart.
Chill for a couple hours…a day is even better. |
